At Tolex African Grill, we craft fresh fufu daily for our customers, ensuring the perfect authentic texture and taste to complement our savory stews. Fufu is a quintessential West African staple, a soft, dough-like swallow made from boiled starchy ingredients that are pounded or stirred into a smooth, elastic ball. While all fufu serves the same purpose, the types differ greatly in their base ingredient and flavor: Pounded Yam is made from yams, resulting in a uniquely stretchy, smooth, and slightly sweet dough that is highly prized; Amala is created from yam flour, yielding a distinctively smooth but firm dough with a deep brown color and an earthy, mildly bitter flavor; and Eba (Gari) is prepared by mixing garri (cassava flour) with hot water, creating a slightly grainy, firm consistency with a distinctive tangy taste.
